This bite from Salume Beddu isn't for everyone. 'Nduja is a spicy, spreadable sausage an old salami-like creation from Calabria, Italy. Salume Beddu is offering it, in chubby packages or as a lunch option with bruschetta.

I'd long been eager to try it, so when I found it on their menu, jumped right in. And it's swell. At least it is for people who love spicy, meaty things. It's hot-spicy, salty, a little acidic, and utterly addictive, at least for metalmouths like me. They serve a small dish of it, heated, with toasted fresh bread and triangles of ricotta salata. It's easily shareable, but it was a swell solo lunch, alongside a grapefruit Pellegrino.

Good stuff. And it would make a great addition to a pasta dish.
